Y'all, if you have not tried the Oklahoma Onion Burger, you are definitely missing out. Now granted, you need to like onions, but if you even remotely can 'tolerate' onions, then you need to try this!

First, you will want to prepare your bun. This goes quick, so you don't want to be waiting on the bun to toast. So, little butter on that griddle, place your bun down and toast it first.
While toasting your buns, take a mandolin and slice up about half a small onion on the thinnest setting. the thinner, the better!
Once that is done, you will want two 2 oz balls of ground beef (or 'mince' depending on where you are). The fresher you can get, the more coarse you can get, the better it is IMO. Get a griddle ripping hot with no oil (other than what remains of the butter, trust me, the burger will still stick (and you want it to) and lightly press the burger out. Salt and pepper to taste, then place a handfull of onions on top. If you think it's too many onions, add a bit more, trust me. Then, with a piece of wax paper (parchment) and a weight, smash the ever loving hell out of the burgers until they are about .5" tall. They should be just slightly larger than your bun.
Let these cook on one side until a very good crust is formed. With a good, hot griddle (I use cast iron), this should take about 1.5 minutes. It's fast. Take a very sturdy spatula or scraper, and scrape under that burger to get off all that crusty goodness you just created. Flip it over and let those onions cook. The outside layer of onions will cook while the inside onions will steam. Makes for a fantastic flavor profile that is so simple, yet so tasty.
While you have the onions cooking, take your cheese (American is about the only cheese that is allowed on these burgers, but you do you and use what you like/have) and place it on top of one, or both of the patties. I only use one slice of 'Murica cheese.
Once the onion side cooks for about 1.5 minutes, maybe 2 depending on how many onions you put on it, place one patty on top of the other, then slide that on over to the bun. Close the burger and enjoy.
It doesn't look like a good burger in a picture with a cheap bun, but the flavor you get out of it is outstanding! One of my favorite burgers!
